Ship Time Vs. Port Time on November cruise

We are cruising in November on the Carnival Liberty to Costa Maya, Panama and Costa Rica and I was wondering how the ship time compared to port time in the ports - any information? Also, anyone heard of a personal speedboat excursion offered through Carnival?
