Do whatever you are comfortable with. Remember most do not take credit cards or travellers checks so cash them in on board the ship. While that won't be exact, it's close enough for one's everyday spending. If you are making a purchase in a regular store, and of course this is going to be dependent on what you're buying, I wouldn't give the cashier anything larger than a $20. That's why they like it so much when you pay in dollars - they're making off with a few extra pesos. We always take pesos out of the ATM at the beginning of our trips, but that's just us.
