I wanted to buy the DVDs that they offer on the last night of my cruise but due to a little more drinking then expected on the final night, I totally forgot about picking it up. Is there any way to contact Carnival and still get copies of these?

No, you can only get them on the ship. You can try to find someone from your roll call that purchased the DVD, they could make you a copy.
