Group switched to Radiance - what shouldn't I miss?

I'm cruising in February 2008 with a large Christian singles group, and after a month of salivating over the Navigator, our group voted to switch to a 7-night itinerary on the Radiance of the Seas. We're going to Key West, Cozumel, Grand Cayman and Montego Bay.

 

What shouldn't I miss on the ship, in Grand Cayman or Montego Bay? (I've been to Key West twice already, Cozumel once.)

In Cozumel, you might find the Mexican Cuisine Cooking Tour at Playa Mia Beach right for you and some of your group, if RCI is offering it. In any case, Playa Mia Beach is a very nice place.
