I'll be interested in this answer too. I did see a horseback riding excursion through Carnival, which I'm considering, but their minimum age is 8, and I have a 6-year-old, so she wouldn't be able to come with me.

 

Also I'm thinking about taking a taxi to the Estero Beach Hotel, and on their web site they indicate that they have horseback riding on the beach next to their hotel. That's not quite the same as a horseback riding excursion, but riding along the beach sounds pretty awesome.
