Specialty restaurants?

We are booked on the Sapphire Princess July 5, 2008 for our first ever cruise. I have got a lot of information from this website (in fact I think I new more about booking a cruise from reading this board than one of the local TA's we asked for a quote).

 

We chose anytime dining as we prefer to eat when we are honestly hungry rather than by the clock. (Ok I know we will be eating even if we are not hungry just because it will be there and look good) What I am wondering about is the restaurants on board. I understand that some are free and some cost extra, some serve specialty food, one is a buffet.

 

I am wondering if someone would list the restaurants on the Sapphire as well as how much the extra cost is(if it applies) and what their specialty is (steak, italian, etc.)

 

Is this extra charge considered a gratuity or should we leave an extra gratuity as well. (I know there is 10.00/day/person auto tip, but feel that is going to be very well deserved and will be tipping above when we feel it is deserved.)
