Alternative dining on Mercury

I know that this thread has been played out before, so please bare with me.

 

On Mercury, how exactly is the Palm Springs dinner option set up & operated? I've been on Century and know the drill with how Sky Bar became the defacto casual dining altrernative for dinner. Is this the same on Mercury or is it slightly different because of the Palm Springs Cafe area. Thanks for any feedback.

When I saw it (I did not eat at it) it looked like basically it was like a casual dinner in the buffet area. There were waiters, wine, menu's etc. I saw very few people use this as we walked to get our sushi some evenings before our late seating.
