We took the Eco-Tortuguero Canal tour and it was one of the best excursions we have ever done. You see birds, alligators, sloths, monkeys, etc. You are bused to the canal, take the trip, you also go by banana plantations. We visited a banana plantation/processing plant, a local farm, the canal and then lunch at a local beach. I thought this was a nice mix of experiences. You might also want to look into a pineapple farm tour. Just a thought. I wish had more time in Costa Rica as I would have loved to explore Limon a bit more, but we are a bit adventurous that way.
