Carnival may accept foreign currency to setup a Sail and Sign account but I'm not sure what their policy is. The Cayman Dollar is pegged to the US Dollar at the rate of 80 cents Cayman will buy $1 US. Most stores in Georgetown accept both currencies so if your kids want to exchange with out buying anything they could just ask nicely and I'm sure it won't be a problem. In Cozumel the Mexican Peso floats but has been trading north or south of 11 Peso's to the Dollar for many years now.
