On the Greek islands, I got the very distinct impression that when there's a ship in port, everybody's open. In Italy, tourist attractions don't seem to close much on Sundays (the Vatican Museums in Rome being a big exception that comes to mind), but little shops do, and you might be prevented from wandering around in the churches if there's a Sunday Mass going on--but usually you can just come back and wander after it's finished.
