Tipping in foreign ports

On the Crown Princess June 19th sailing. Going to several ports on Princess shore excursions as well as several ports with self organized tours. Do we tip in USD or must we exchange into local money?

We are booked for a two day private tour in St. Peteersburg and need to pay for it in U.S. dollars (clean bills, no tears or wrinkles). I would guess that the same would be true for the guide and driver. However, I would like some advice as to how much to tip for a two day tour. Thanks.
