I think that the easiest thing to do is to write out individual items, decide how much you think you'll spend on them and then increase it a bit just in case. That way you have a buffer in case you decide to buy more pictures or souvenirs or something. Most things are pretty easy to figure out based on what you've already booked or by asking on here.

what do you pay for at camp carnival?

 

Camp Carnival starts charging babysitting fees after 10pm. Some nights after 10p.m they have sleepovers for the kids. DD loves it. DH and I like staying out late so for us we pay the fee for her to stay there a few extra hours. And yes, you can also tip the counslors.
