Conquest time zone vs. Cozumel?

I need to know the difference between the "ship's time" and Cozumel time in order to book the Royal Dolphin Swim at Chankanaab for November. It looks like Galveston and Cozumel are both on Central Standard Time. I'm wondering if the ship changes time at all during the cruise. We will also be sailing after the daylight savings time change in Oct. So, will that effect the time difference? Anyone have any help for me?

Since Galveston and Cozumel are in the same time zone the ship's time and local time should match. It could be different in summer because Cozumel may not use daylight saving time. It is not normaly used in the tropics.
