they really only have the basics Coke, Diet coke, sprite...

You can take a 12 pack or two onboard with you without any problems.

Not all cabins have a fridge. depends on the age of the ship and the type of cabin. On some of the older ships, only the suites have fridges. On the newer ships, most cabins have them.

The OP is on Independence of the Seas, so yes all cabins will have mini fridges in them.

 

The sodas available onboard are coke, diet coke, sprite - available in the fountain and in cans.

 

They also have Diet Sprite available (cans only) and sometimes they will have Diet Caffeine Free Coke available if you ask (cans only).
