The person who delivers the food is not your cabin steward, so they don't have a key to get into your room. And putting it down in the hallway, on the floor is just yucky. Who knows what someone might do to your food while it is out there? In addition, it's common to tip the person who brings your room service food which you can't do if you aren't there.
