Grand Cayman this August, need suggestions for tours

Last time we were there we took a taxi to 7 miles beach and did some shopping in the area around the dock. This August would like to do something else. Seems like the Stingray sand bar and snorkeling range between $35-$45 per adult. Has anyone gone for less and what company is it with? Can you take a taxi to the place and just pay admission? Can you take a taxi or a local bus and just tour around the island. Heard Hell is not worth it and Turtle Farm is good for 10 minutes look. Not really into shopping and beach again. Any suggestions? Thanks. Has anyone been cancelled from Grand Cayman because of rough sea and they can't dock the tender boat? Where would Carnival take you and if they don't replace the port do they offer compensation? Going on the Legend this August.
