We were on Kauai in October 2008..we rented a car...we just drove the coastline and stopped at various places...We stopped at BUBBA's Burgers in the port town and got a great burger..stopped at flea markets....there are signs along the coastal road pointing out various points of interests....

On the ship there are sessions each day which highlights each port of call you visit..interesting and informative. You can get maps too which has points of interests to stop at....Just remember to take an umbrella with you when you go on the island..it is known to be the rainiest island..it rained most of the day we were there, but we still got to see many beautiful sights.

Well worth renting a car and far less expensive than tours. It would help to know what your interests are - water oriented or just sightseeing, beach, zipline, Waimea Canyon, etc. Kauai is known as The Garden Isle, very green and beautiful. Lots to enjoy there. Aloha!

Do rent a car, car rental are so cheap with all the competition.

 

If you only have a day you'll likely have to choose between north or south as it is next to impossible to do both.

 

Personally I think the south has more highlights.

 

I'd work back from Waimea Canyon. Drive to the very very end / top and work your way back. That way you can see the best first and depending on crowds and timing decide how many stops you want to do coming back.

 

Be sure to stop at Spouting Horn. There are some good vendors at the park there.

 

There is a coffee plantation also worth a quick stop if you are interested.

 

Two falls also worth a stop, both short drives from the main road; Wailua and Opaka'a.

 

That would make for a full but not crazy day.

Depending on your interest and the makeup of your group, I would recommend Lydgate State park, particulalry if, like us, you have a half day available after a full day where you have done bigger stuff. It was only a few miles out of Lihue, and had a protected swim area that was like swimming in an amazingly well-stocked fishbowl. We found this recommendation in Frommer's Hawaii with Kids, and it was a relaxing beach morning. There's also a great playground on the opposite side from the beach. We also did a zipline tour through Outfitters Kauai -- it was fantastic (but expensive). While we did that, my mother did a tour at the botanical park, which she said was very interesting.
