Don't recall ever seeing banana boat rides in St. Thomas. Parasailing and jet skis you can find, in addition to Coki, at Sapphire. Jet skis also available (guided) at Sugar Bay, Bolongo Bay and Morningstar. You likely can book parasailing at those beaches too as they are all resort beaches.
