Need ideas exploring Islands.

My wife and I are travelling to the Eastern Caribbean for a 7 day trip in early September. Our ports of call are:

San Juan

St. Thomas

Half Moon Cay

Grand Turk

We are investigating what to do on our trip and could use some advice.

We are not shoppers and not into sailing. We do like exploring off the beaten path away from tourist areas. We would like to visit waterfalls, Island coves etc. We do like to snorkel and may try out snuba during our trip.

We went to Cancun on our honeymoon and went on a tube ride through a tropical stream and cave. We would like to do something similiar to this on our cruise. Any ideas? One thing I found is Virgin Islands Eco Tours in St. Thomas which has tour where you kayak through some of the Islands, hike and snorkel. This sounds interesting to us. We really want to explore the lush beauty of the Islands, but need some ideas on where to go.

Also, for the ports we are going to, what areas would be the best for snorkeling?

Thanks.
