Currency on board IOS - $ or £ ?

Hi - I am sure this question has been asked before, but can anyone please tell me what currency we will be charged in for items onboard Independence of the Seas this summer (as it's leaving from Southampton, and only sailing round Europe). Also, what currency should we use for local ad hoc tipping on board? Sterling because we embarked in UK, Euros because that's where they might spend their tips or Dollars because it's a US ship?? Confused!

All charges are in US$, tips can be in any of the mentioned currency, £ can be spent in S'ton, Euros in Europe. A lot of the tip money is sent home to family and staff can exchange currency on board.
