Last time I was on Journey there was a late disembarkation option, which you paid for, which meant you could stay on the ship until 12 - not sure if this is still an option? Meant I had a last lunch onboard as I had a late flight

It depends on the port and the next iteniery. Sometimes they do allow passengers to stay on the ship util around noon, but it comes with a fee. You would have to check on your specific sailing.
