Aside from diet pepsi, you can find diet sierra mist (lemon-lime soda) at some bars. You can get club soda\seltzer from any bar and ask for lemon/lime wedges. You can bring flavor additives (like MiO drops) to flavor your water.
The MDR's, buffet, Haven Restuarant, and most specialty restaurant will offer some sugar-free desserts. There will NOT be a broad or deep number of choices, but they will be available.
Being on a cruise is not a helluva lot different than going out to eat at a restaurant in terms of choices. There will be choices, but not as many as if you were in your own home. I struggle to control my blood sugar on normal days, but I have found that being on a cruise doesn't make that process harder..it is simply my choices that make it harder.

I carry MiO branded water enhancers whenever I travel. They have a flavor line, energy line, and electrolyte line.

If you have the UBP, can't you get 2 drinks per keycard anyway? So with 2 cards, you could get 4 drinks?

We told our butler to skip the normal canapes and asked for: PB&J sandwiches, lunchmeat rollups, ham or turkey and cheese sandwiches, bar mix, assorted cookies

As a side note, almond milk is available on-board, you just have to ask for it.

Generally speaking, NCL withholds a certain amount of inventory for excursions so that they can be booked onboard. Cruise passengers that do not book direct with NCL may not have access to book online, so they always keep some in reserve.
Other CC'ers may be able to tell you where to go to book on your embarkation day.

Do you mean brands of alcohol or drinks?
In terms of brands, I can't answer for you. However in terms of drinks, any drink below $15.00 will be included. Therefore, you could get a standard martini included if you don't have a brand preference, but if you want what NCL considers a "super-premium" brand, then that same martini may now be $18.00 and you would have to pay the difference ($3.00 plus the difference of the 20% gratuity).

We didn't order any specialty coffees in the Haven Restaurant, but the regular coffee was an excellent French Press!

I stayed in the Haven on the Breakaway (Deck 15) last year (my first experience in the Haven), so I am by no means an expert...
However, in looking at the deckplans for the 2 room options, I would stick with 12706 for the amount of extra space in the room. You would still have all the benefits of being able to access the haven, you would just need to use the elevator to get there.

gotcha...no daily maximum on NCL (unless you are obviously drunk...and even then sometimes is not an issue).
As an aside, the Haiwaiian cruise is great, have fun!

Your question is a bit vague in terms of meaning but...
You can walk up to a bartender with 2 cruise cards and get 4 drinks total (1 transaction per card). After those drinks are consumed, you can repeat the same transactions. You can do this for your entire cruise.
The drinks included with the beverage package have a max value of $15 each. If you want a more expensive drink, you will pay the difference (above $15).

My take is that NCL treats the Haven restaurant like other Specialty Restaurants -> No rotating menus. Only the MDR's and Buffet's menus rotate.

I see videos of the getaway and bliss, but not breakaway. Are they the exact same?
Breakaway and Getaway are sister ships (both are Breakaway-class), so they are as close as close to identical as they can be.

It is the same thing. NCL just like to confuse people by calling things by different names.

Personally, I think they changed the name to make it less confusing. IMO, under the old name (Ultimate Beverage Package), people assumed that coffee drinks and bottled water would be included. Now the name (Unlimited Open Bar) implies alcoholic drinks or soda from the bars.

On deck 15, head toward midship (by the main pool bar), there is an enclosed smoking section.
I know that some folks were smoking on the outdoor Haven private sundeck (deck 17) on my sailing, but I am not sure if they were actually allowed or just did it anyway.

Haven Pool is fair game for kids, but the Hot Tubs have a sign that they are "Adults Only" (although that is ignored, unfortunately).
We will be on Epic next year so I can't comment on it specifically, but in terms of the Breakaway, most of the pool deck is devoted to "patio dining" (comprised of tables and chairs for dining). You actually have to walk up the steps to get to the majority of loungers.

If you purchase the wifi package, wifi calling will work along with text messaging. Without the wifi package, RD29P5 is correct, except that Tmobile does not have a rate package for NCL's CellatSea. Which means that when at sea...you will likely pay the highest roaming rate if it works at all.

Instead of dealing with NCL, my family has decided to use the HOHO bus in Barcelona (September sailing). I figured that disembarkation for the majority of the ship was going to be confusing enough, that I didn't want to worry about booking an excursion with them.
