HAL's lemon/white chocalate truffles

I **think** this may be how to make them, though am not 100% certain. We found the lemon flavor to be very subtle, and I think this will do it.

 

Use a few strips of lemon zest, add to the heavy cream, heat (till hot but not boiling), let cool, remove the lemon zest, and then incorporate the now-lemon-flavored cream with the white chocolate and unsalted butter to make the ganache.

 

I don't have access to good white choc right now, so haven't tried .... if you do try it, please let me know.
