Day Sail Recommendations?

My husband I will be sailing aboard the Liberty of the Seas December 12, 2010 with our daughter (age 21 months at sailing) and I was wondering if anyone could recommend a day sail in St. Maarten. We will be there on a Wednesday Deember 15 from 7am-6pm.

You could try the pirate ship the Lord Sheffeld. I would be a little nervous with a 21 month old on a catamaran myself. We enjoyed our day on it a couple of years ago.
