You can put a luggage tag on just about anything at the pier and have it delivered to your room. I usually duct tape together diapers water and formula (back when we needed it) slap a tag on it and voila it is delivered right to our room!

I've done the same as yuu plan, drive the full size stroller on board and check the umbrella stroller with the luggage by putting a luggage tag on it. At the end of the cruise I put the folded stroller in the hall with the rest of the luggage. Last time though, I grabbed all the luggage in the baggage claim area and forgot the extra stroller - thankfully it was a cheap one.
