Ephesus private tour

We'll be sailing on a back to back Navigator of the Seas soon. I do not enjoy taking cruise excursions but prefer getting my own cab. Did anyone try this in Turkey and did you feel safe? We were also thinking of doing this in Crete, Sicily and Sardinia. I'd welcome any suggestions or advice.
