You have to prepay, so you may as well wait until you board, the price is the same. There is one tiny advantage. The symbol will be printed on your SeaPass card instead of being a sticker. Ever notice that the price of beer while we are in Miami is different than when out to sea. We ordered the soda package for our 3 day cruise and it came to $20.70.
