Which dock and what time can I board

Boarding usually does, as TC says, begin at noon. Sometimes it is delayed - if the ship has a safety drill etc. But I have never known it start later than 1.30pm. You can go to la Veranda and have lunch once you are on board. Typically you will be able to get into your suite at 2.30pm.

Have a wonderful cruise!
