Are specialty restaurants open on the first night out?

We are sailing on the Jade in late November to the Holy Land out of Rome and were wondering if the usual specialty restaurants are open for business the first night out. Or are the main dining rooms and customary poolside feast our only options?

They are open the first night. I recommend the first night as they are usually pretty quiet. My wife and I ate at LeBistro the first night of our last cruise on the Spirit. We were the only couple there! The Spirit also had 20% off for the first night at any specialty restaurants. Maybe the Jade does the same?
