Best LOCAL Flavor / Food

This may seem like a repeat question, but it is not. I am on a lifetime quest to experience as many unique food culture experiences as I can. I make it a point (even here in the good old US of A) to NEVER eat at chain restaurants when travelling.

By unique, I do not mean gross or expensive....I don't need to try a Flying Fish Roe with Peacock Foie gras or anything like that.......I just mean unique to the island and local culture.

I have been to Barbados twice, and both times I have had a WONDERFUL flying fish meal at Sand dunes in St. Andrew when we stopped for lunch with Glory Tours. This time, we are considering a "choose your own adventure" type of tour in November and I'm looking for suggestions on the best place to eat that captures, in meal form, what it means to be Bajan.

I have considered leaving this decision open to the actual driver of the tour, asking him/her to take us to their personal favorite restaurant for lunch, but I'd like the advice of this respected community of travelers.

Where on Barbados can I find the most authentic local Cuisine?

Thanks in advance..

Lemon Arbor! -in the parish of St.John.

This is an inland place, up on Golden Ridge, about a mile beyond the Pumping Station.

If your taxi driver doesn't immediately recognize "Lemon Arbour" then you have the wrong guy

because Lemon Arbour is Puddin-an-Souse-Central, come Saturday!

The pastoral views from this place look across the St.John Valley.

Yes, a good mix of locals and some visitors (depending on the time of year).

Plus just getting you there

will take you across a slice of inland, highland Barbados

even if you go nowhere else --at least you'll see a fair chunk of the island, en route.

Here's another view from the restaurant at Lemon Arbor

That's sugar cane growing --looks a lot like big grass..
