Personally you won't get better water than on the ship including in your room. I would just bring on one or two and keep refilling as you go. Refill at night put in your frig.

NCL will also be selling water as you exit but y'll need to sign away your first born.

Just remember that if your refilling in common area's such as buffet not to have your bottle touch the spout and risk spreading germs. You may also get lynched by fellow cruisers as well.

If you have ever been on a cruise that's had a virus outbreak y'll understand.

Does anyone know if you are allowed to bring on bottles of water and cans of soda

I just brought an extra duffle bag, put a case of water in it, and with luggage tag went to our room no problem - Safeway, Costco are two options on Honolulu to buy it if you have a car. Ask your room steward to remove the mini bar items on the first day so you can use the fridge.
