Caribbean Excursion recommendations on Windstar?

We will be on a Caribbean Windsurf cruise in March. I have tried to book my favorite independent excursion on Antigua (Eli's Eco-Tours), but the port location is too far away from their meet-up spot. I am concerned that this may be the case for some of the other ports as well.

 

What were your favorite ship sponsored excursions? We will be visiting Martinique, Antigua, St. Bart's, Dominica and St. Lucia.
