You cannot pre-book before you board. Once you are on board, you can book in advance if, and only if you want to reserve for the entire cruise. If you just want to use it here and there during the cruise, you must book in the morning of the day(s) that you want to go there. And by "morning", I mean "morning". Like, set your alarm and go first thing. When you reserve, you will have a choice of half day (a.m. or p.m.) or full day.
