You are not able to pre-pay for either ahead of time. However, you can purchase Fun Ship Dollars and have them applied to their S&S account.

When you order them they can add a personal note what they are to be used for..

All you need to place the order is their names, ship, sail date and cabin number. The reps can look up their booking number so it can be a surprise.
