Can you determine what order the items come to you? We would like to start with the Painter's mignon, move to the slider party, etc. That way we could get the stuff we want the most first and work our way down.

Seems to me we told our waitress what we wanted first. You could always just order those 2 to begin...

You probably could force them to serve you out of order. When we went, they basically served like at a regular restaurant. Appetizers, soups first, mains last. Your server will probably do what you want, but it might mess them up a bit. For us, we ate so much stuff we had to cancel the last main item before dessert.

Yes you can. I just ate there on Friday. The waiter chose our order of items (told us how they would come) but I am certain they will let you eat in any order. We had a great time! fantastic presentation. Enjoy!
