am considering a drink package on celebrity silouette. the have a max of $5 for beers and a max of $8 for wine. if i buy the package and order a beer or glass of wine over these amounts do i have to pay the full amount of the drink or just the difference.

That's not correct information. The package the OP is referring to is the Classic Alcohol Package and if you order something above your limit, you will have to pay the full amount. The package where you only pay the difference is Celebrity's Premium Alcohol Package, where your drink package prices go up to $12 a glass, rather than the $8 from the Classic package.
