Carnival Red Frog Pub snacks

We've enjoyed the Red Frog Pub on Carnival Magic, and were taken by the snacks - especially Jamaican Pigeon Peas. These are something like corn nuts, but not really. I've looked for a recipe w/o luck. We found the peas in our local HEB, but now haven't a clue how to bake then or what spices to coat them in.

 

Any suggestions.
