I was wondering does the last day of the cruise count since we have to get off of the ship early in the morning. If we purchase the 1st full day of sailing would we pay for 6 or 7 days?

The last day does not count. If you purchase the first full sailing day, not embarkation day, you will pay for 6 days.

debarkation day does not count ... the bars are not open that early in the morning (and that day is not included in the cruise day count).
