I read around that most of the ship tends to die down around midnight, but are there areas that are open 24 hours? What watering hole would I most likely find people at 1 in the morning?

It depends on the cruise, but most bars tend to be very quiet by midnight. You might find a few at the martini bar or casino bar, but Celebrity isn't a hopping busy cruise line like other lines. There isn't anything open 24 hours.
