A silly question I know, but when Princess say "shirts with collars" are required in the evening , does that mean that the "polo" style of shirt is permissible, or do they mean it has to be the sort of shirt that you might wear a tie with?

I think Princess words this in the way so they can avoid T-Shirts in the dining rooms in the evenings. Any type of shirt with a collar is acceptable.
