Wine purchased at ports of call?

I've read here that NCL permits passengers to bring wine aboard during embarkation and that a $15 corkage is assessed.

I have a few Shore Excursions booked that include visits to wineries.

Can I purchase wine on the excursion and bring it aboard? When and how do they collect the corkage fee under these circumstances?

If they discover it as you board, they will shunt you over to a table where the wine can be surrendered to them to hold for you until the end of the cruise, or allow you to pay the corkage fee and keep it with you (presumably to drink on board).
