If it's a credit originally furnished by Celebrity, it's pretty much 'use it or lose it'; your best bet is to either spend it onboard or take cash out against the balance in the casino, though you'll pay a percentage fee. If it's a credit furnished by a TA, then the balance is yours; we had about $90 TA credit left on our shipboard account, and the refund was already on our credit card by the time we got home.
