I understand that one must give a deposit, for each person in the party, with initial reservation. If you cancel, do they charge your credit card for the entire fee? From looking through their website, it would seem that they do however I wanted to double check. I sent them an email a few days ago and have not heard back from them.

I cancelled our reservation today. We were charged the deposit, but they said we wouldn't be charged the balance. We needed more for 2 sixteen year olds to do.

If you cancel at the last minute or do not show they can charge you -- otherwise they may be turning away paying customers thinking that you will show.

Thank you both! I understand completely about the last minute cancellation/no show, I was just concerned if we changed our minds a month or so prior. We will be there in June and at this point my head is spinning with planning excursions :)

If you are not sure don't book -- but if you wait to long it may be booked full and then you are looking for other options. It is your call.
