Each ship as a letter code for it. The email would be:

 

LImaitred@carnival.com

Is there a list of ship's letter code somewhere? Specifically, I was wondering what the code for the Magic is (I'd like to contact Magic's Maître D for our cruise in October).

I just wanted to mention and since I don't have a dog in the fight, so to speak, John Heald said that the Maitre D's are busy and may not reply as email is not part of doing their job. John advises to post on his Facebook page and he will send email to the Maitre D' for you.

 

OP, if you have special needs re food, you'd be better served by contacting the special needs department in advance.
