In my experience...All government offices, all banks and most stores will be closed. Most restaurants, at least in the tourist areas, will be open. Larger tourist attractions like the turtle farm will be open. The movie theatre is usually open. A few stores in the tourist area may open if there's a lot of ships in. Excursions should be prebooked as it's a very busy week and some of the smaller operators may not be running excursions that day (again, unless there's a large number of ships in, in which case they may ignore the holiday to cater to the extra crowds).
