We are sailing on the Celebrity Summit in January of 2016 and I got a price quote from our TA for $599. I'm curious to know if these prices will stay the same or if they will ever go up or down?? However, if it's a popular sailing it's also possible that they will stop selling 3rd person cabins (even if your cabin can allow it). If you're happy with the price best to book when suitable. Also, right now, some cabins/sailings have a promotion if you rebook with benefits for 3rd person. This will finish soon, but also rebooking will be more expensive when 1/2 rates have gone up.
