Sorrento or Capri from Naples?

Both by fast-ferry, both from the same jetty alongside the cruise terminal. But different booking windows in the line of ticket booths, so make sure you get in the right line. Talking of lines, go ashore soonest to avoid the lines that build after about 9am. And there's a ferry for Sorrento at 9am.

Crossing time for both is about an hour, cost vaguely around 15 euros each-way.

I believe that you still can't buy timed return tickets for Capri, I don't know about Sorrento. You have to buy your return on the island - do it as soon as you arrive because you'll be returning at a popular time that books out. And being an island, the only Plan B is ferry from Capri to Sorrento then ferry or train (or expensive taxi) from there to Naples, and that's time-consuming.

If you go to Sorrento you can combine with Pompeii or Herculaneum by taking ferry to Sorrento & the cheap half-hourly Circumvesuviana train back to Naples, stopping at Pompeii or Herculaneum on the way. Or vice-versa.

But if you're going to stick with just Sorrento or Capri, then it's no contest - Capri is by far the more interesting & scenic.

You can purchase return tickets in the morning, the reason many of us suggest waiting until you get to Capri to do this is to allow yourself the greatest range of return times. If the company you are going over with has a return time that is satisfactory to you, go ahead and purchase the return in the morning so you don't have to think about it.

The reason this is so difficult is that each different line has its own ticket booth and line at Molo Beverello (Naples), so you'd wind up waiting on different lines to get outbound and return tickets from two different companies.

It takes 40 minutes by ferry to get to Sorrento and 45 minutes to get to Capri, at least according to the schedules.

The fares to Capri range from €19 - €21, depending on the line.

The fare to Sorrento is €12,30. There is only one operator for this route, Alilauro: http://www.alilauro.it/orari-e-tariffe?route_group_id=3

You can also get to Sorrento by local train (Circumvesuviana) but it takes twice as long and it's an uncomfortable, hot ride often made standing at least part of the way.

As to which location to choose, for me it would be Capri hands down. I'm not sure what you would do with yourself for an entire day in Sorrento unless you are really into shopping or hiking (there are some amazing hikes up into the mountains).
