Equinox formal nights and show times

First time Celebrity cruisers, 10 night Caribbean cruise in December. Two questions:

Which nights are formal nights (want to reserve optional dining venues, but not on formal nights)?

We have late dining (8:30). Will we miss any evening entertainment venues?

We were on that cruise last December. The formal nights are sea days and I believe it is the second and third sea day.

The shows are scheduled either at 7 and 9 some nights and 8:30 and 10:30 some nights. You would attend the 7 pm and the 10:30 pm shows if you have late dinner.
