Which Night for Specialty Restaurant?

My documents say that we will be given a comp dinner at a specialty restaurant on a time of Princess's choosing...

I read the above posts regarding changes, but can I also choose a different specialty restaurant then what I may be assigned? I would assume they would probably assign us the one with the lowest surcharge? Or is it just 'luck of the draw'?

 

I was assigned to Sabatinis and I had wanted to eat at the steakhouse. Changing to the other was not a problem except getting a day/time that worked for me. It did work out ok in the end and I enjoyed my dinners. There was a lemon tart dessert that I really loved :)

I managed to get assigned to Crown Grill instead of Sabatini's once. I just called the first day to ask.
