Ship excursions will have the meeting time and place detailed on the excursion tickets that will be in your stateroom when you arrive.

If you are referring to the America's Cup Yacht Race, we walked off the ship and were told to go to the person holding the sign #10 (or whatever number).

 

Once everyone got there, we walked to the tender that took us to the race.

 

BTW, probably my all time favorite excursion. It is a blast. Nothing like it, have fun. Just be ready to compete, as your Captain wants to win ..... badly.
